Traditional Swedish chocolate cookies

Ingredients

180 g. gluten-free plain white flour Semper or other 
1 tsp. baking soda
a pinch of sea salt
75 g. coconut oil, melted
80 g. coconut sugar 
3 tbsp. cacao powder
1 tsp. vanilla powder or paste
3 tbsp. molasses
25 g. dairy-free chocolate, chopped into small pieces

These gluten-free chocolate cookies are maybe the tastiest I've tried recently. I was inspired by this recipe during my stay in Stockholm. They are sugar-free, gluten-free, and dairy-free. Traditional ingredients of these cookies are chocolate, cardamon, and special Swedish baking syrup (Ljus sirap). Unfortunately, there isn't an equivalent of this syrup in Bulgaria, so I decided to use molasses with a caramel taste. Cookies are a totally chewy chocolate treat. 

 

Steps

Preheat oven to 180 degrees. Line a large baking tray with parchment paper.

In a bowl mix gluten-free white flour, baking soda, and sea salt.

In another bowl add coconut oil, coconut sugar, cacao powder, vanilla powder, and molasses. Add the dry ingredients and whisk together. Fold in the chopped chocolate.

Form cookies with your hands. Makes about 6 cookies. Do not flatten the cookies.

Bake for 10-12 minutes. Remove from oven transfer to a wire rack and allow cookies to cool completely.  Cookies are even more delicious the next day.
