Wash and dry all leafy greens (iceberg lettuce, arugula, and baby spinach). Combine them in a serving bowl. |

Cut the cherry tomatoes in halves and add them to the bowl. Garnish with some grated pecorino cheese on top. |

Combine ingredients for the dressing: lemon juice, mustard, honey, salt, and black pepper. Pour the dressing over the salad. Stir and serve immediately. |
