For the salad:

500 g. young potatoes

250 g. asparagus

5 radishes, thinly sliced

2 springs of green onion, chopped

parsley, chopped

For the dressing:

juice from 1/2 lemon

2 garlic cloves, finely minced

1 tsp. mustard powder

sea salt, to taste

To prepare the asparagus, steam for 3-5 minutes, until tender. |

Remove from the basket the potatoes and asparagus and place in a large bowl together with radishes, green onion, and parsley. |

Combine all ingredients for the dressing and mix well. Pour the dressing over the salad and toss until evenly mixed. Serve immediately. |
