For the salad:

500 g. young potatoes, skin on

2 sprigs of green onion, finely chopped

For the pesto:

1 avocado, ripe

2 cups basil, fresh

3 garlic gloves

sea salt, black pepper

3/4 cup walnuts
Steps

Steam the potatoes in a steamer set over a pan of boiling water for 20 minutes, until tender. |

Meanwhile, combine in a blender avocado, basil, garlic and walnuts. Season with salt and pepper. Add a tablespoon of water and blend until smooth. |

Pour the pesto over the steamed potatoes and mix well. Garnish with finely chopped green onions and basil. |
